New Orleans Rice and Beans
Ingredients
- 1 smoked sausage or kielbasa, any kind.
- 1 onion, chopped.
- 2-3 cloves garlic, chopped.
- 1 bell pepper (preferably green, but any color works), chopped.
- 1 can pork & beans.
- 2-3 tbs refried beans.
- Salt, pepper & cayenne pepper to taste.
Directions
- Heat a little bit of cooking oil while cutting the sausage or kielbasa
into thick slices. Fry in hot oil for a few minutes.
- Add onion, garlic, & bell pepper and fry for 5-6 minutes.
- Add the pork & beans. If the mixture seems dry at this point, add a
little water or bouillon (from powder). Allow to simmer for 20-30 minutes
on low heat in a covered pan.
- While the beans simmer, cook the rice.
- Check on the beans, and if the dish seems a bit watery, thicken it with
some refried beans.
- Serve with cooked rice.
